Blueberry Ice Cream

There's nothing better than a scoop of homemade blueberry ice cream on a warm summer day. Made with fresh blueberries, this recipe is bright, refreshing, and bursting with sweet berry flavor in every bite. It's one of my favorite ways to take advantage of blueberry season, whether I'm picking up berries at the farmers market or bringing home a haul from a local u-pick farm. With its creamy texture and vibrant color, this simple ice cream is the perfect treat for hot weather and a delicious way to celebrate fresh summer produce.

Blueberry Ice Cream Recipe

Ingredients

Blueberry Sauce

  • 2 cups blueberries

  • ¼ cup sugar

  • 1 tablespoon lemon juice

Ice Cream Base

  • 1 ½ cups heavy cream

  • 1 ½ cups whole milk

  • ¾ cup sugar

  • 1 tsp vanilla bean paste or extract

  • Pinch of salt

Instructions

1. Make the Blueberry Sauce:
In a medium saucepan, combine the blueberries, sugar, and lemon juice. Cook over medium heat, stirring occasionally, until the blueberries have broken down and released their juices, about 8–10 minutes.

Using an immersion blender, carefully blend the mixture until smooth. Pour the blueberry sauce through a fine-mesh sieve into a bowl to remove the skins and create a silky texture. Allow the sauce to cool completely.

Alternative Method: If you do not have an immersion blender, cook the blueberry mixture as directed, then allow it to cool slightly. Transfer to a blender or food processor and blend until smooth. Strain through a fine-mesh sieve and let cool completely.

2. Mix the Ice Cream Base:
In a large bowl, whisk together the heavy cream, milk, sugar, vanilla, and salt until the sugar is fully dissolved. Stir in the cooled blueberry sauce until well combined.

3. Churn:
Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions (usually 20–25 minutes), until it reaches a soft-serve consistency.

4. Freeze:
Transfer the ice cream to a lidded container. Freeze for at least 4 hours, or until firm.

5. Serve:
Scoop and enjoy on its own or with your favorite desserts!
