Blueberry Cobbler

There’s nothing that says summer quite like a warm blueberry cobbler. Every year, I look forward to blueberry season—whether I’m picking up fresh berries from a local farm stand or spending a morning handpicking them straight from the bush. Juicy, sweet blueberries baked beneath a golden, buttery topping create the kind of simple dessert that never goes out of style. Serve it warm with a scoop of vanilla ice cream, and you have the perfect summertime treat.

Blueberry Cobbler Recipe

Ingredients

Filling

  • 4 cups blueberries

  • ½ cup granulated sugar

  • 1 tablespoon lemon juice

  • ¼ teaspoon salt

Batter

  • ½ cup unsalted butter

  • 1 cup all-purpose flour

  • 1 cup sugar

  • 2 teaspoons baking powder

  • ¼ teaspoon salt

  • ¾ cup milk

Instructions

  1. Preheat your oven to 350°F.

  2. Place the butter in your baking dish and put it in the preheated oven to melt.

  3. While the butter is melting, combine the blueberries, sugar, lemon juice and salt.

  4. In a separate mixing bowl, whisk together the flour, sugar, baking powder, and salt.

  5. Gradually stir the milk into the flour mixture until you have a smooth batter.

  6. Remove the butter from the oven once melted.

  7. Spoon the blueberry mixture evenly over the butter, do not stir.

  8. Carefully pour the batter over the blueberries in the hot baking dish — do not stir.

  9. Bake for 40–45 minutes, or until the top is golden and a toothpick inserted into the batter comes out clean.

  10. Let cool slightly before serving. This cobbler is wonderful warm with a scoop of vanilla ice cream!
