Apple Cookies w/ Cinnamon Glaze
These cookies were inspired by my dad. He’s always loved classic oatmeal raisin cookies, so I put a little spin on his favorite by swapping in sweet apple—another one of his loves. I started with my go-to cookie dough base, folded in hearty oats and fresh apples, and finished them off with a drizzle of cinnamon glaze. Fresh from the oven, they’re warm, cozy, and everything I adore about fall baking. And the best part? They’re made with him in mind.

Apple Cookies with Cinnamon Glaze
Prep: 15 minutes | Bake: 10–13 minutes | Total: About 30 minutes
Yields 24-36 cookies (depending on size of balls)
Ingredients
Cookie Dough
1 cup unsalted butter
1 cup light brown sugar
½ cup white sugar
2 eggs
1 tsp vanilla
2 ½ cups all purpose flour
2 tsp baking soda
1 tsp salt
1 tsp cinnamon
1 1/2 cup oats
1 cup chopped apples
Cinnamon Glaze
1 1/2 cups powdered sugar
2 tablespoons unsalted butter, melted
2 tablespoons milk
1 tablespoon brown sugar
1/2 teaspoon cinnamon
Instructions
Preheat the Oven: Preheat oven to 375°F (190°C). Line two baking sheets with parchment paper.
Make the Dough:
In a large bowl, cream together softened butter, brown sugar, and white sugar until light and fluffy.
Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
In a separate bowl, whisk together flour, baking soda, salt, and cinnamon. Gradually mix dry ingredients into the wet mixture until just combined.
Fold in oats and chopped apples.
Bake the Cookies: Scoop rounded 1.5-2 inch balls of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10–13 minutes, or until edges are golden and centers are just set.
Cool: Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely before glazing.
Make the Glaze: In a medium bowl, whisk together powdered sugar, melted butter, milk, brown sugar, and cinnamon until smooth. The glaze should be pourable but not too runny—add more milk a teaspoon at a time if needed.
Decorate the Cookies: Once cookies are completely cooled, drizzle the glaze over the tops using a spoon or piping bag. Let the glaze set for 15–20 minutes before serving.
