Apple Cookies w/ Cinnamon Glaze

These cookies were inspired by my dad. He’s always loved classic oatmeal raisin cookies, so I put a little spin on his favorite by swapping in sweet apple—another one of his loves. I started with my go-to cookie dough base, folded in hearty oats and fresh apples, and finished them off with a drizzle of cinnamon glaze. Fresh from the oven, they’re warm, cozy, and everything I adore about fall baking. And the best part? They’re made with him in mind.

Who am I baking this for?

My dad! He loves the flavors in these cookies!

Ingredients

Cookie Dough

  • 1 cup unsalted butter

  • 1 cup light brown sugar

  • ½ cup white sugar

  • 2 eggs

  • 1 tsp vanilla

  • 2 ½ cups all purpose flour

  • 2 tsp baking soda

  • 1 tsp salt

  • 1 tsp cinnamon

  • 1 1/2 cup oats

  • 1 cup chopped apples

Cinnamon Glaze

  • 1 1/2 cups powdered sugar

  • 2 tablespoons unsalted butter, melted

  • 2 tablespoons milk

  • 1 tablespoon brown sugar

  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat the Oven: Preheat oven to 375°F (190°C). Line two baking sheets with parchment paper.

  2. Make the Dough:

    • In a large bowl, cream together softened butter, brown sugar, and white sugar until light and fluffy.

    • Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.

    • In a separate bowl, whisk together flour, baking soda, salt, and cinnamon. Gradually mix dry ingredients into the wet mixture until just combined.

    • Fold in oats and chopped apples.

  3. Bake the Cookies: Scoop rounded 1.5-2 inch balls of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10–13 minutes, or until edges are golden and centers are just set.

  4. Cool: Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely before glazing.

  5. Make the Glaze: In a medium bowl, whisk together powdered sugar, melted butter, milk, brown sugar, and cinnamon until smooth. The glaze should be pourable but not too runny—add more milk a teaspoon at a time if needed.

  6. Decorate the Cookies: Once cookies are completely cooled, drizzle the glaze over the tops using a spoon or piping bag. Let the glaze set for 15–20 minutes before serving.
