S’mores Cookies
As the weather cools down and gathering around a fire becomes a little more appealing, I start craving all the classic flavors of fall and winter. These S’mores Cookies capture everything I love about a traditional s’more—gooey marshmallows, melted chocolate, and graham crackers—but in a soft, chewy cookie. They're the perfect treat for cozy nights at home when it's too chilly for a campfire but you're still craving that nostalgic s’mores flavor.
S’mores Cookies
Prep: 15 minutes | Bake: 10–13 minutes | Total: About 30 minutes
Yields 24-36 cookies (depending on size of balls)
Ingredients
1 cup unsalted butter
1 cup light brown sugar
½ cup white sugar
2 eggs
1 tsp vanilla
2 ½ cups all purpose flour
2 tsp baking soda
1 tsp salt
1 cup chopped graham crackers
1 cups semi-sweet chocolate chips
½ - 1 cup mini marshmellows
Instructions
1. Preheat Oven:
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. Make the Dough:
In a large bowl, cream together softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract. Gradually mix in flour, baking soda, and salt until fully combined. Fold in chocolate chips and chopped graham crackers.
4. Bake:
Roll the dough into 1.5-2 inch balls. Place dough balls on the prepared baking sheet, spacing them a few inches apart. Press 2-3 marshmallows into the top of each ball. Bake for 10–13 minutes, or until edges are golden and centers are just set.
5. Cool:
Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
