Strawberry White Chocolate Cookies

This recipe came straight from one of my pregnancy cravings during baby #2. In the first trimester, I was all about strawberries—couldn’t stop thinking about them! So, my husband, our son, and I packed up and headed to our local strawberry patch for some serious berry picking. We came home with way more than we planned (oops), so naturally, I started baking.

That’s how these strawberry and white chocolate chip cookies were born. The sweet berries and creamy white chocolate make the perfect pair—and they totally hit the spot.

Strawberry White Chocolate Cookies

Ingredients

  • ½ cup unsalted butter

  • ½ cup brown sugar

  • ¼ cup granulated sugar

  • 1 egg

  • 1 tsp vanilla

  • 1 tsp baking soda

  • ½ tsp salt

  • 1 cup chopped or freeze dried strawberries

  • ½-1 cup white chocolate chips

Instructions

1. Preheat oven to 375°F.

2. Cream the butter and sugars: In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy.

3. Add the wet ingredients: Mix in the egg and vanilla extract until fully combined.

4. Add the dry ingredients: Sprinkle the baking soda, salt and flour into the bowl. Mix until evenly distributed.

5. Fold in the strawberries and chocolate chips: Gently fold in the strawberries and white chocolate chips. If using fresh strawberries, pat them dry with a paper towel to avoid excess moisture.

6. Scoop the dough: Use a cookie scoop or tablespoon to drop rounded balls of dough onto your prepared baking sheet, spacing them about 2 inches apart.

7. Bake for 10–12 minutes, or until the edges are golden and the centers look just set. Be careful not to overbake—they’ll continue to firm up as they cool.
