Ooey Gooey Butter Bars

Ooey Gooey Butter Cake
Prep: 15-20 minutes | Bake: 35-40 minutes | Total: 50-60 minutes
Yields about 24 bars
Ingredients
Crust
1 1/4 cups all purpose flour
3/4 cup granulated sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
½ cup butter, melted
2 large eggs
1 tsp vanilla bean paste or extract
Filling
1 (8 ounce) package cream cheese
2 eggs
4 cups confectioners' sugar
1 tsp vanilla bean paste or extract
Powdered sugar for dusting (optional)
Instructions
1. Preheat & Prep:
Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish or line it with parchment paper.
2. Make the Crust:
In a medium bowl, whisk together flour, granulated sugar, baking powder, baking soda, and salt. Add melted butter, eggs, and 1 teaspoon of vanilla. Mix until a thick batter forms. Press the mixture evenly into the bottom of the prepared baking dish.
3. Prepare the Filling:
In a large bowl, beat the cream cheese until smooth. Add eggs, remaining 1 teaspoon of vanilla, and mix until well combined. Gradually add the confectioners’ sugar and beat until smooth and creamy.
4. Assemble & Bake:
Pour the cream cheese mixture over the crust and spread evenly. Bake for 35–40 minutes, or until the edges are golden and the center is slightly set but still a bit jiggly.
5. Cool & Serve:
Allow to cool completely in the pan. For clean slices, chill in the fridge before cutting. Dust with additional powdered sugar if desired. Serve and enjoy!
