Who do I make these for?
Back in college, my husband (then boyfriend) Jake used to host Thursday night dinners for the offensive line during football season. I’d often bake something sweet for the guys, and this recipe quickly became a crowd favorite. Jake’s roommate—and one of our best friends—Eli was also a big fan of it. So, this one’s for the boys: big appetites, bigger hearts, and a serious love for homemade dessert.
Oreo Truffle Brownies
Prep: 20-30 minutes | Bake: 35-40 minutes | Total: 2 hr (includes cooling)
Yields ~24 brownies
Ingredients
Brownie Base:
1 ½ cups granulated sugar
1 cup light brown sugar
1 cup butter (melted and cooled)
4 eggs
1 tablespoon vanilla
1 ½ cups all purpose flour
¾ cup unsweetened cocoa powder
1 tsp salt
½ - 1 cup semisweet chocolate chips (optional)
Oreo Truffle Topping
1 10-13 oz package chocolate creme cookies (set aside ~2 cookies for topping)
8 oz Cream Cheese (softened)
1 10 oz bag semisweet chocolate chips
1 tablespoon coconut oil
Instructions
1. Preheat & Prep:
Preheat oven to 350°F (175°C). Line a 9x13-inch pan with parchment paper.
2. Brownie Layer:
In a large bowl, mix melted butter, sugar, eggs, and vanilla. In a separate bowl, whisk together flour, cocoa powder, and salt. Gradually stir dry ingredients into the wet mixture. Fold in chocolate chips, if using. Pour batter into the prepared pan and bake for 35–40 minutes. Let cool completely.
3. Oreo Truffle Layer:
Crush the cookies in a food processor or plastic bag (reserve some crumbs for topping). In a bowl, mix crushed cookies with softened cream cheese until smooth. Spread evenly over the cooled brownie layer.
4. Chocolate Topping:
Melt chocolate chips with coconut oil in a double boiler or microwave in 20-second intervals, stirring until smooth. Pour over the Oreo truffle layer and spread evenly. Sprinkle reserved cookie crumbs on top.
5. Set & Serve:
Refrigerate until chocolate topping is set. Once firm, cut into bars and enjoy!
