Homemade Vanilla Wafers

Ingredients

  • ½ cup unsalted butter, softened

  • ⅔ cup granulated sugar

  • 1 large egg

  • 3 teaspoons vanilla bean paste or pure vanilla extract

  • 1½ cups all-purpose flour

  • 1 teaspoon baking powder

  • ½ teaspoon salt

  • 1 tablespoon milk

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.

  2. In a large bowl, cream together the butter and sugar until light and fluffy.

  3. Add the egg, vanilla bean paste, and milk, mixing until smooth and well combined.

  4. In a separate bowl, whisk together the flour, baking powder, and salt.

  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

  6. Scoop teaspoon-sized rounds of dough onto the prepared baking sheet, spacing them about 2 inches apart.

  7. Bake for 12–14 minutes, or until the edges are lightly golden.

  8. Cool completely on a wire rack.
