Peach Cobbler
This peach cobbler recipe takes me right back to hot summer days in my husband’s hometown. One of my favorite memories is spending a whole day riding on the river with him and his brothers, then ending it with a trip to the classic Lane Southern Orchard for their famous peach cobbler and homemade ice cream. This recipe tastes just like that perfect day—warm, sweet, and full of sunshine.

Ingredients
Filling
4 cups sliced peaches
½ cup light brown sugar
¼ teaspoon salt
Batter
½ cup unsalted butter
1 cup all-purpose flour
1 cup sugar
2 teaspoons baking powder
¼ teaspoon salt
¾ cup milk
Instructions
Preheat your oven to 350°F.
In a saucepan over medium heat, combine the sliced peaches, light brown sugar, and salt. Heat, stirring occasionally, until the sugar dissolves and the mixture is fragrant and slightly syrupy, just a few minutes. Remove from heat.
While the filling heats, place the butter in your baking dish and put it in the preheated oven to melt.
In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
Gradually stir in the milk until you have a smooth batter.
Carefully pour the batter over the melted butter in the hot baking dish — do not stir.
Spoon the warm peach mixture evenly over the batter — again, do not stir.
Bake for 40–45 minutes, or until the top is golden and a toothpick inserted into the batter comes out clean.
Let cool slightly before serving. This peach cobbler is wonderful warm with a scoop of vanilla ice cream!
