Lemon Bars

Lately, pregnancy has had me reaching for treats on the tarter side—and these lemon bars hit the spot every time. They’re bright, zesty, and perfectly balanced with just the right amount of sweetness. If you’re craving something refreshing and citrusy, this recipe is exactly what you need.

I make this recipe for my mom. I have a fond memory of us making lemon bars together when I was growing up, so this one is for her.

Ingredients

  • 2 cups all-purpose flour

  • 3/4 cup confectioners' sugar

  • 1 cup butter, melted

  • 4 large eggs

  • 2 cups white sugar

  • 1 teaspoon baking powder

  • ¼ cup all-purpose flour

  • 3/4 cup lemon juice

Instructions

  1. Preheat your oven to 350°F. Grease a 9x13-inch baking dish or line it with parchment paper for easy removal.

  2. In a medium bowl, combine all-purpose flour and the confectioners' sugar. Pour in the melted butter and mix until a soft dough forms.

  3. Press the dough evenly into the bottom of the prepared baking dish to form the crust.

  4. Bake the crust for 15-20 minutes, or until the edges are lightly golden. Remove from oven and set aside while you prepare the filling.

  5. In a large bowl, whisk together the eggs and white sugar until smooth.

  6. Add the baking powder, ¼ cup of flour, and lemon juice, and whisk until fully combined and slightly foamy.

  7. Pour the lemon filling over the warm crust.

  8. Bake for 30 minutes, or until the center is set and no longer jiggly.

  9. Let cool completely in the pan, then refrigerate for at least 1 hour before slicing.

  10. Dust with extra confectioners' sugar before serving, if desired.
