Fruit Pizza w/ Cream Cheese Topping

This fruit pizza holds a special place in our family—it’s the recipe my husband grew up with, inspired by his grandma’s famous fruit cookies topped with creamy, dreamy cream cheese frosting. Every Fourth of July, I bake this to bring a little festive flair by decorating it as an American flag. It’s a delicious way to honor family traditions while celebrating summer and good times with loved ones.

Ingredients

Cookie Base

  • 3/4 cup unsalted butter, softened

  • 1 1/2 cups white sugar

  • 2 eggs

  • 1 tablespoon cream or milk

  • 2 3/4 cups all purpose flour

  • 1 1/2 teaspoons baking powder

  • 1 tsp salt

  • 2 tsp vanilla

Topping

  • 16 oz. cream cheese, softened

  • 3/4 cup powdered sugar

  • 2 teaspoons vanilla

  • 1-pint strawberries, sliced

  • 1-pint blueberries

Instructions

  1. Preheat your oven to 350°F. Line a 9x13-inch baking sheet with parchment.

  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.

  3. Beat in the eggs, cream (or milk), and vanilla extract until combined.

  4. In a separate bowl, whisk together the flour, baking powder, and salt.

  5. Gradually add the dry ingredients to the wet mixture, mixing just until combined into a soft dough.

  6. Press the dough evenly into the prepared 9x13-inch baking sheet, spreading it all the way to the edges.

  7. Bake for 15–18 minutes, or until the edges are lightly golden and the center is set. Remove from oven and allow to cool completely.

  8. While the cookie base cools, prepare the topping by beating together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.

  9. Once the cookie base is completely cooled, spread the cream cheese mixture evenly over the surface.

  10. Arrange the fruit to create an American flag design:

    • Use blueberries to make the blue square in the upper left corner.

    • Use sliced strawberries to create the red stripes.

    • Leave gaps or use the cream cheese base to represent the white stripes.

  11. Chill the fruit pizza in the refrigerator for at least 30 minutes to set before slicing into squares.

  12. Serve chilled and enjoy this festive, delicious dessert perfect for any patriotic celebration!
